Chris Chafe and Barry Bennett are the dynamic duo behind Sláinte, Newfoundland and Labrador's first specialty whisky bar. Chris Chafe, known for his significant contributions to the local food and beverage scene, made history as the youngest Executive Chef in St. John’s by the age of 22. In 2019, he and Barry Bennett brought their shared vision to life with the opening of Vu Restaurant. They promised exceptional food enjoyed in an inspiring space that brings out the social side of people, and they delivered. Vu quickly became a favorite among patrons who appreciate not just great food but a truly remarkable guest experience.
Following Vu's success, Chris and Barry have turned their focus to Sláinte, where they continue to leave their mark on the hospitality industry. Chris describes his culinary philosophy: “Food is meant to spark emotion. It’s a chance to forget about the outside world and focus on the moment. With our modern take on classic dishes, we hope to stir some old memories while providing you with a fresh and exciting experience.”
Barry Bennett, with over 30 years in the food and beverage industry, is thrilled with their accomplishments and continues to be fueled by a passion for creating memorable guest experiences. As a sommelier, he has personally curated a selection of wine for Sláinte’s ‘wine wall.’ Barry’s excitement is palpable! “Sometimes I think I’m in L.A. or New York or Glasgow. And then my eyes hit the glass panes and the fog is as thick as the smoke pouring out of our house old-fashioned. And I remember exactly where I am. I’m home. And we’re doing this here.”
